A great lunchbox filler that will satisfy any cravings for sweetness, these bliss balls are a fruitier, nuttier, lighter option than most others. They’re really flexible too. For example, you can add some grated lime zest if you want to get your tropical vibe on, and use different fruits, dried apple or pineapple, for example. On top of all this, they’re super handy for those times when you want to brag that ‘yeah, I’ve eaten like, five different fruits today’.

Ingredients

Quantity Ingredient
4-5 dried apricots, about 25 g
1 large dried mango cheek
5 dried peach halves
4 dried pear halves
90g desiccated coconut
55g ground almonds
30g pepitas (pumpkin seeds), optional
2 1/2 tablespoons raw honey
or maple syrup
2 1/2 tablespoons cashew butter
finely grated zest of 1 lime, optional
1/2 teaspoon vanilla extract
or 1/4 teaspoon vanilla powder

Method

  1. Place all the ingredients in your food processor or blender and process them until combined.
  2. Take about a tablespoon of the mixture at a time and roll it into 2.5 cm balls. Place the balls in an airtight container and refrigerate or freeze. These will keep for up to 2 weeks in the fridge, and a couple of months in the freezer.
