Ingredients

Quantity Ingredient
60g butter
1 onion, finely sliced
2 garlic cloves, finely sliced
3 parsnips, peeled, cored and finely sliced
100ml cream
50ml milk
salt
few drops lemon juice
pepper

Method

  1. Heat the butter in a heavy-based saucepan over a moderate heat. Add the onion and garlic and sweat for a few minutes until onion is soft and translucent. Add the parsnips and sweat for another few minutes without colouring.
  2. Add the cream and milk to the pan and bring to a gentle simmer. Cook until the parsnips are tender, about 10 minutes. Season well and tip into a blender. Whiz to a velvet smooth purée and finish with a drop of lemon juice. Push through a fine sieve and serve.
