250g sugar
5 egg whites

Method

  1. Put the egg whites and sugar in a stainless-steel bowl and warm gently to 65°C in a bain-marie or over a pan of gently simmering water. Tip into the bowl of your electric mixer and whisk at the highest speed until the mixture stops steaming. Reduce the speed to medium and continue whisking until the mixture is just warm. Reduce the speed again to the lowest setting, and continue whisking until the mixture reaches room temperature.
