This is one of my favourite spice mixes; I find the fennel and star anise are particularly good with crustaceans, such as marron, yabby, crayfish, lobster and scampi, and one of my all-time favourite dishes, roasted lobster tails.

Ingredients

Quantity Ingredient
20g sea salt
1 cinnamon stick
4 garlic cloves
4 sprigs thyme
2 star anise
6 coriander seeds
8 fennel seeds

Method

  1. Mix all the ingredients in a mortar and gently crush with the pestle until just broken but not too crushed.
  2. Heat a heavy-based frying pan over a medium heat. Add the spices and toast for 3–5 minutes without colouring, until the flavours are released. Use immediately.
