Ingredients

Quantity Ingredient
100g wet salt
1/2 cinnamon stick
2 garlic cloves
4 sprigs thyme
1 sprig rosemary
1/2 bay leaf
1 star anise
2 peppercorns
4 coriander seeds

Method

  1. Place all the ingredients in a mortar, pound well until well crushed and aromatic. This salt will keep in an airtight container in the refrigerator for up to 2 weeks.
