600g raspberries
400g sugar

Method

  1. Sterilising the jars

    Boil the jars and lids for 3 minutes to sterilise them.
  2. Macerating the fruit

    Wash the raspberries and place them in a heavy-based saucepan. Add the sugar, stir to coat the berries, then set aside for 1 hour.
  3. Cooking the jam

    Place the pan over low heat and slowly bring to the boil, skimming the surface to remove any impurities. Increase the heat and continue boiling for about 15 minutes.
  4. Bottling

    Check whether the jam has reached setting point — a teaspoon of jam should thicken quickly on a chilled saucer. Spoon the raspberry jam into jars and seal immediately.
