I absolutely love mint – on my potatoes, in tea, in my smoothies and soups, and now in my ice cream! I dare you to make this for dinner when you’ve got friends coming round – and then tell them how it’s made without dairy or refined sugar. They will love you forever and beg for the recipe!

Ingredients

Quantity Ingredient
2 frozen bananas
1 x 400ml tin coconut milk
1/2 teaspoon vanilla extract
2 avocados, peeled, pitted and chopped
8 drops peppermint essential oil
small handful spinach
large handful cacao nibs
8 large fresh mint leaves
4 dates, pitted
6 ice cubes

Method

  1. Combine all the ingredients in a blender or food processor, then pour into a freezerproof container with a lid. Fold in the cacao nibs. Freeze for a couple of hours until solid, then serve.
