This is a lovely, rich and creamy ice cream without the dairy or refined sugar. Green tea (i.e. matcha) ice cream is actually a rather popular pudding at Asian restaurants, but now you can easily make it at home and know that it’s packed with goodness.

Ingredients

Quantity Ingredient
1 x 400ml tin coconut milk
2 frozen bananas
2 tablespoons matcha powder
4 dates, pitted
4 tablespoons maple syrup
6 ice cubes
1/2 teaspoon xanthan gum

Method

  1. Combine all the ingredients in a blender or food processor, then pour into a freezerproof container with a lid. Cover, then freeze for a few hours until solid.

  • Matcha boosts metabolism and burns calories as well as working to calm and relax you.
