There are so many incredibly unhealthy granola bars out there that are seeping with refined sugar, and that’s something I didn’t want my kids eating or me either! These bars are quite a hearty snack and they will keep you full for hours and pack in a healthy amount of fibre, protein and omega 3s.

Ingredients

Quantity Ingredient
350g dates, pitted
270g rolled oats
80g almonds
35g pumpkin seeds
60g dried cranberries
120ml maple syrup
120g hazelnut butter

Method

  1. Put the dates, oats and almonds in a blender or food processor and blitz until only small bits remain. Transfer to a mixing bowl. Add the pumpkin seeds and cranberries and mix well.
  2. Mix the maple syrup and hazelnut butter together in a small bowl. Drizzle it over the date mixture and mix well. I find using my hands works best as you want to get it to a thick dough. Transfer the dough to the prepared baking tin and press down until it is flat and has covered the entire tin. Place in the fridge for 20 minutes to set.
  3. Remove the chilled slab from the tin and cut into about 10 squares or bars.
  4. Store in an airtight container in the fridge for up to 1 week.

  • Made in a flash, these bars will keep for several days so you will have a hearty, sustaining snack to see you through the week.

  • Cranberries aren’t just for christmas and Thanksgiving! These small but mighty berries are great for the health of your mouth. They can prevent bad bacteria from doing damage to your mouth and teeth.
