My favourite cake, hands down, has always been carrot cake. Even as a young girl, I would choose that flavour for my birthday cake. I’m obsessed! So I wanted to create a smaller, healthier version that I could just pop in my mouth when exhaustion struck. Not only do these small-but-mighty bites taste incredible, but they also take me down memory lane and give me an instant body AND mind boost.

Ingredients

30g goji berries
135g rolled oats
25g ground almonds
2 tablespoons chia seeds
60g hazelnut butter
4 tablespoons maple syrup
1/2 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1/4 teaspoon ground nutmeg
65g grated carrots
30g oat flour

Method

  1. Begin by soaking the goji berries in a cup of water and set aside for about 10 minutes, then drain.
  2. Combine the oats, ground almonds and chia seeds in a mixing bowl. Add the hazelnut butter, maple syrup, vanilla extract, ground cinnamon, ginger and nutmeg, grated carrots and the soaked goji berries and mix well.
  3. Scoop the dough out a tablespoon at a time and use your hands to roll each one into bite-sized balls.
  4. Store in an airtight container in the fridge for up to 1 week.

Note

  • Gram for gram, the little goji berry has about 500 times more vitamin C than an orange and considerably more beta-carotene than carrots.
