Simple granola with pumpkin seeds and goji berries

Sadly, most shop-bought granola is packed with sugar. In fact, if you look on the pack, you will usually see that sugar is either the second or third ingredient listed on the back. When you make your own granola at home, you’re in control of the amount of goodness that goes in and you can experiment with different nuts, seeds and flavours.

Ingredients

90g rolled oats
170g buckwheat groats
60g walnuts, chopped
35g pumpkin seeds
55g goji berries
2 tablespoons raw honey
2 tablespoons coconut palm sugar
2 tablespoons coconut oil

Method

  1. Preheat the oven to 180°C. Melt the coconut oil in a saucepan over a low heat and let it cool. Once cooled, mix all the ingredients in a bowl using your hands. Spread the mixture thinly on a baking tray and bake in the preheated oven for 10 minutes, or until lightly toasted. Cool before serving or storing in a container in a cool, dry place.

  • Just 35g pumpkin seeds contains nearly half of the daily recommended dose of magnesium, which helps our body to relax.
