Chilli avocado mash and coconut oil on rye

This is possibly my favourite breakfast of all time. But the great thing about this recipe is that it’s perfect as a snack too. I love to slather coconut oil and avocado on pretty much everything. This recipe combines them both and adds some bonus ingredients to make it super healthy, super filling and super-energising.

Ingredients

Quantity Ingredient
2 ripe avocados, peeled, pitted and chopped
2 spring onions, chopped
1 garlic clove, crushed
1/2 teaspoon sea salt
1 teaspoon dried chilli flakes
1 lime, juiced
4 slices rye bread
4 tablespoons coconut oil
freshly ground black pepper

Method

  1. Combine the ripe avocados, spring onions, garlic, sea salt, chilli flakes and lime juice in a small bowl and mash well using a fork.
  2. Toast the rye bread and, while it is still warm, spread each piece with 1 tablespoon coconut oil.
  3. Spoon the avocado mash evenly on each piece of toast and season with black pepper.

Note

  • Most people think that the high-infat and calorific avocado wouldn’t be considered good for weight loss. Research is now suggesting that monounsaturated fatty acids, such as those found in avocados, are less likely to be stored as fat and more likely to be used as energy.
