In this recipe we use Fuji Matcha, Japanese tea, which apparently has been described as having the ability to make one’s life more full and complete. I love this ice cream for the beautiful natural colour: it lifts the spirits. Great on its own or with chocolate or black sesame ice cream.

Ingredients

Quantity Ingredient
800ml Basic sweetened ice cream mix
1 tablespoon green tea

Method

  1. To make the ice cream, simply make one quantity of the basic sweetened mix and make up to the stage before cooling.
  2. In a cup measure out the green tea powder and mix well with a tablespoon of the hot mix. Once you have a smooth paste, whisk into the hot ice cream mix. Strain through a sieve if there are any lumps.
  3. Leave the mix to cool, then place into an ice-cream maker and churn. Scoop the churned ice cream into a container and keep in the freezer until ready to serve.
