This loaf is fantastic served with milky coffee. It’s also great served with a dollop of maple syrup at breakfast time.

Ingredients

Quantity Ingredient
1 teaspoon butter
1 teaspoon plain flour
250g self-raising flour
1/2 teaspoon ground nutmeg
250g soft brown sugar
250ml light olive oil
6 eggs
100ml espresso
100ml double cream
200g chopped walnuts

Method

  1. Preheat the oven to 180°C. Use the butter and plain flour to butter and flour a 1.2 litre loaf tin.
  2. Mix the self-raising flour, nutmeg and sugar together in a large bowl.
  3. Add in the remaining ingredients and beat with a hand whisk until you have a smooth batter.
  4. Pour the batter into the prepared tin and bake for approximately 55 minutes or until the cake springs back to the touch.
