Ingredients

Quantity Ingredient
500ml full-cream milk
2 tsp sugar
7g active dried yeast
600g plain flour
1 tsp salt
50ml olive oil

Method

  1. Place the milk and sugar in a saucepan over low heat and heat it to about 60°C – it should never be hot enough to boil, but the idea is to get it to a temperature that is sufficient to kickstart the yeast – use a kitchen thermometer to check. Add the yeast to the warm milk and whisk to combine.
  2. Put the flour, salt and olive oil in a mixing bowl. Make a well in the centre and pour in the milk mixture. Gently mix with a fork. As it starts to come together, knead with your hands and keep kneading until a smooth, elastic dough forms. Cover with a clean, damp tea towel and leave in a warm place for 30 minutes or until doubled in size.
  3. To make pizzas, separate the dough into 4 pieces and roll out into circles on a lightly floured work surface. Transfer to a lightly oiled tray, top with your favourite toppings and bake in a preheated 220°C oven for 10–15 minutes until the pizza base is cooked.
