Ingredients

Quantity Ingredient
200g cod skin, (swapsies: any type of sh skin)
vegetable oil, for deep-frying

The seasoning crumb

Quantity Ingredient
1 teaspoon crushed sichuan peppercorns
1 teaspoon salt
1 teaspoon sugar
2 teaspoons smoked paprika

Method

  1. Preheat the oven to 100°C. Lay the fish skin on kitchen paper, dabbing it with more kitchen paper to ensure all sides are completely dry. Place the skin, outer side down, on a piece of greaseproof paper on a roasting tray, and put it into the oven for 20 minutes to dry it out completely
  2. Meanwhile, mix the seasoning crumb ingredients together and set aside. After 20 minutes, remove the fish skin from the oven and slice it into bite-size pieces, ready to deep-fry.
  3. Half-fill a large pot, wok or deepfryer with vegetable oil and heat to 180°C, or use a wooden skewer or wooden chopstick to test by placing the tip in the oil: if the wood starts to fizz after a second or so, the oil is hot enough. Using a slotted spoon or a Chinese frying skimmer, carefully lay the pieces of dried fish skin in the oil. Once all the pieces are in, give them a gentle push to separate them completely. There will be an initial light crackling noise, and then the sizzling will start to slow down as the moisture is released from the pieces of skin. Deep-fry until the pieces are crisp and dry, about 3 minutes.
  4. Once fried, place on a couple of pieces of kitchen paper to drain off any excess oil. Scatter the seasoning crumb over the crackling while the pieces are still hot, and give them a good shake around to distribute the seasoning evenly.
  5. Serve as an alternative to crisps for a fun snack.
