This cocktail is best served in a collins glass.

Ingredients

Quantity Ingredient
3 strawberries
45ml the west winds sabre gin
2 5 cm ice cubes with edible flowers inside, (see method)
3 star anise
fever-tree tonic water

Method

  1. To make the edible flower ice cubes, fill an ice cube tray quarter full with water. Add flowers face down and freeze. Add water to top up trays to half full and freeze again. Fill water to the top of the tray and freeze again. Ensure you only use edible flowers and none that have been sprayed with chemicals.
  2. To make the cocktail, slice the strawberries and lightly muddle them inside a collins glass. Pour the gin into the glass and stir quickly. Drop the ice cubes and star anise into the glass and top with tonic until three-quarters full or to the top of the ice cubes.
