Roasted carrots with feta

Ingredients

Quantity Ingredient
3 carrots, cut on the diagonal
2 tablespoons olive oil
3 garlic cloves
sea salt
1/2 teaspoon chilli flakes
100g feta cheese
2 tablespoons flat-leaf parsley, chopped
freshly ground pepper

Method

  1. Preheat the oven to 200°C. Line a baking tray with baking paper.
  2. Place the carrots in a bowl and pour in the olive oil and coat well. Add the sea salt, pepper and chilli flakes, then place on the baking tray.
  3. Roast for about 25–30 minutes, or until nicely golden. Place the carrots in a dish and toss through the feta and parsley. Serve immediately.
