1/2 cauliflower

Method

  1. Cut the cauliflower into small florets and place in a microwave-safe container with a lid. Do not add water. Microwave on 100% power for 5 minutes.
  2. Using a hand-held blender, whizz the cauliflower until it starts to resemble rice. Alternatively, pulse it in bursts in a food processor. Serve immediately.
