Ingredients

Quantity Ingredient
1 large cos lettuce, cut into 6 pieces
or 6 baby cos lettuce
150g pancetta or good-quality bacon, diced
1 tablespoon olive oil
2 onions, chopped
5 garlic cloves, crushed
2 carrots, chopped
2 sprigs thyme, chopped
sea salt
40ml dry white wine
500ml salt-reduced chicken stock
freshly ground pepper

Method

  1. Preheat the oven to 160°C. Blanch the lettuce in a pot of boiling water for about 30 seconds. Shake off the excess water and set aside.
  2. In a non-stick frying pan, gently brown the pancetta in the olive oil. Add the onion, garlic and carrots and cook until the vegetables just start to turn a nice golden colour.
  3. Add the thyme, pepper and sea salt and stir again. Add the white wine and let it sizzle, then add the chicken stock. Bring to the boil, then simmer for about 5 minutes.
  4. Place the lettuce in a baking dish, cut side up, and pour over the liquid. Cover with foil and cook for about 20 minutes. The lettuce shouldn’t be too soggy!
