What is it about French onion soup? When you really think about it, I reckon it’s the combination of the sweet caramelised onion with thyme and gruyère cheese. Ok, sorted! Here’s my non-boombah version! Yes, it has sweet caramelised onions and gruyère cheese.

Ingredients

Quantity Ingredient
2 teaspoons butter
1 tablespoon olive oil
2 brown onions, thinly sliced
1.5 litres salt-reduced beef stock
2 tablespoons cognac or brandy
sea salt and freshly ground pepper

Gruyère parmesan crisps

50g grated parmesan cheese

Method

  1. Preheat the oven to 180°C. Line a baking tray with baking paper.
  2. Heat the butter and the olive oil in a heavy-based saucepan over medium heat until quite hot.
  3. Add the onion and stir for about 10 minutes, or until translucent and lightly golden. Add the cognac and let it ‘cook off’ for 3 minutes. Add the stock and bring to the boil. Reduce the heat and simmer for about 5 minutes. Season with sea salt and pepper and continue to simmer over very low heat.
  4. To make the gruyère parmesan crisps, place teaspoonfuls of grated gruyère and parmesan cheese on the baking tray, leaving space for spreading. Bake for 6–8 minutes, or until golden and bubbling. Remove from the oven and leave on the baking paper to cool.
  5. To serve, spoon ladlefuls of the onion soup into ramekins or small bowls and top with your gruyère parmesan crisps.
