I always have a good cack when I hear people order, ‘Just a caesar salad, thanks’, thinking they are being ‘good’ as this is their attempt at eating light. So wrong. Caesar salad is dripping in boombahness. But God it tastes so yum. Again, here’s a way I reckon you get that caesar hit without the calories.

Ingredients

Quantity Ingredient
1 cos lettuce
125g parmesan cheese
12 thin slices prosciutto

Anchovy dressing

Quantity Ingredient
1 x 29 g tin good-quality anchovies in oil, drained
1 garlic clove
1 tablespoon greek yoghurt
1 tablespoon light mayonnaise
squeeze lemon juice
sea salt
freshly ground pepper

Method

  1. Prepare the cos by chopping off the end and the tops of the lettuce. Create about 24 bite-size pieces.
  2. Heat a non-stick frying pan over medium–high heat and add the prosciutto slices. Cook until golden, then leave to cool on paper towel where they will crisp up.
  3. Shave 24 ‘curls’ of parmesan and set aside.
  4. To make the anchovy dressing, place the anchovies and garlic clove in a food processor and process for about 10 seconds. Add the yoghurt, mayonnaise, lemon juice and pepper and process for another 20 seconds, or until smooth.
  5. To serve, lay the cos lettuce pieces on a platter and add the parmesan. Top with a dollop of the dressing, then the crispy shard of prosciutto.
