I’m so curious as to why some of my friends are terrified about cooking fish. When did we get so scaredy-cat about heating a pan, adding a little oil or butter, placing in a piece of seasoned fish or prawns, turning after a few minutes, leaving for another minute or two, then serving? Mussels simply open themselves like magic after you cover them with a lid. And when was the last time you really had to shuck an oyster yourself? I blame the TV chefs who always give us the willies with the warning, ‘Don’t overcook the fish’. Ok! We won’t!!
