Mum used to do this for dinner parties years ago, but I don’t think it ever dates because it looks so gorgeous. Yes I’ve deboombah-ed the recipe but it still tastes lovely. Red-jewelled pears served with delicious yoghurt ‘cream’. And the hint of basil is a refreshing twist.

Ingredients

Quantity Ingredient
400ml red wine
3 teaspoons coconut sugar
1 cinnamon stick
4 pears
2 tablespoons greek yoghurt
1 vanilla bean
2 basil leaves, finely shredded

Method

  1. Pour the wine into a saucepan and add the coconut sugar and cinnamon. Add the vanilla bean. Bring to a gentle boil, then turn down to a simmer. Add the pears and cook for about 1 hour.
  2. Remove the pears and turn the heat up again on the syrup. Bubble for a few minutes, then remove from the heat. Remove the vanilla bean.
  3. Blend the yoghurt with the basil (and honey if you must).
  4. Serve each pear on a plate, drizzle with the syrup and serve with a little shot glass of yoghurt on the side.
