Using my beloved iceberg lettuce cups, these are a favourite Sunday night treat at our joint. Now don’t have a fit, but I prefer to use mince with a little bit of fat, not your lean, lean mince. This is, of course, for flavour and apart from a pinch of sea salt, that’s it. I find you don’t have to add sugary sauces and breadcrumbs and onions etc. to jazz it up. This turns out a true beef burger… juicy and tasty.

Ingredients

Quantity Ingredient
500g beef mince
sea salt
1 tablespoon olive oil
1 large red onion, halved and thinly sliced
1 large ripe tomato, sliced
1 iceberg lettuce
1 slice tasty cheese per person
1 tablespoon dijon mustard
1/2 tablespoon light mayonnaise
1/2 tablespoon greek yoghurt
freshly ground pepper

Method

  1. Take a small handful of beef and mold it into a patty. Sprinkle each burger with a little sea salt.
  2. Heat the olive oil in a non-stick frying pan or grill over medium–high heat and cook the burgers until cooked through.
  3. Prepare the iceberg lettuce ‘cups’ as you would san choy bau (gently take off the large leaves, trim and refrigerate until ready).
  4. Assemble your burger in any order you like! Serve with a dollop of mustardy mayo by combining the mustard, mayonnaise and yoghurt.
