Here is my take on the classic Eton Mess. You know, the schoolboy ‘rah rah’ dessert that always looks so pretty? Gotta love that name … gotta hate the calories from all the cream, sugar and meringue. So, if you need a fruity kick at breakfast, here’s my version. The crunchy part comes from almonds: just wrap them in a tea towel and smash them with a rolling pin. There you go – a quick morning workout!

Ingredients

Quantity Ingredient
2 tablespoons greek yoghurt
50g raspberries
50g strawberries
6-8 blanched almonds, smashed coarsely

Method

  1. Mix the yoghurt with the berries and spoon into a small glass bowl or brandy balloon. Sprinkle with the smashed almonds and serve immediately.
