Ingredients

Quantity Ingredient
2 teaspoon dijon mustard
2 tablespoons red wine vinegar
1 egg yolk
4 tablespoons walnut oil
4 tablespoons groundnut oil
sea salt
freshly ground black pepper

Method

  1. Whisk together the mustard, vinegar and egg yolk in a bowl. In a separate bowl, mix together the two oils, then slowly and gradually whisk into the mustard and vinegar until emulsified. Season with salt and pepper and the dressing is ready – this one is best used on the day it is made.
