A green salad is served with most meals in France, and a good dressing really livens up a bowl of mixed leaves. Aim for a selection of leaves with different colours and textures, such as frisée, chicory and cos lettuce. This French house dressing comes from one of my French mates, who just happens to be one of the best chefs in the world… Enjoy!

Ingredients

Quantity Ingredient
15ml clear honey
15ml white balsamic vinegar
250ml vegetable oil
1/2 small shallot, finely diced
1/4 garlic clove, finely sliced
1/2 teaspoon chopped parsley
1/2 teaspoon chopped chives
1/2 teaspoon chopped basil
1/2 teaspoon thyme leaves
sea salt
freshly ground black pepper

Method

  1. In a bowl, whisk together the honey and vinegar, then slowly whisk in the oil. Add the shallot, garlic and herbs, then season to taste and serve. This will keep in a screw-topped jar in the fridge for up to a week.
