Strawberries with vodka sabayon

This is so simple and tasty. Adding vodka to the sabayon isn’t too overpowering when it’s made into a pudding like this. You could add fresh basil or even tarragon to make a change. One thing’s for sure, make it with fresh British strawberries in season – only then will you understand just how good they are.

Ingredients

Quantity Ingredient
200g strawberries
3 egg yolks
1 tablespoon caster sugar
1 tablespoon vodka

Method

  1. Preheat the grill to its highest setting. Hull and quarter the strawberries.
  2. Make the sabayon. Place the egg yolks, sugar and vodka in a heatproof bowl set over a pan of barely simmering water. Whisk vigorously and constantly until the mixture becomes thick and foamy, then remove from the heat.
  3. Place the strawberries in a heatproof dish. Spoon the sabayon over them, place under the grill and cook for 3 minutes, until golden brown. Serve immediately.
