Posset has to be one of the easiest desserts to make. The idea is that the lemon juice sets the cream, and whisking it a little will speed up the process. Limoncello is a great liqueur from the west coast of Italy, mainly Amalfi, which is one of the most beautiful parts of the world. As well being famous for its coastline, it’s known for the lemons that grow on the hills. Limoncello is traditionally made with lemon zest that’s steeped in grain alcohol until the oils are released, then combined with a simple sugar syrup. It’s always best served very cold.

Ingredients

Quantity Ingredient
200ml double cream
25ml milk
30g icing sugar
1 lemon, juiced, strained
100ml limoncello, very cold

Method

  1. Whisk all the ingredients together in a bowl until smooth. Divide among 4 small serving glasses and place in the fridge to chill.
  2. Serve with a glass of limoncello on the side.
