Five-minute banoffee cheesecakes

This takes five minutes to make and even less time to eat. Who doesn’t like these flavours? Shortly after the picture was taken, even I grabbed a plate of it. You can buy ready-made caramelized condensed milk now, as well as dulce de leche, from the supermarket, and this saves you so much time. The secret is not to make it too sweet. It will go better with the bananas if you don’t.

Ingredients

4 digestive biscuits
1 vanilla pod
300g full-fat cream cheese
200ml creme fraiche
200ml double cream
200ml dulce de leche
50g butter
100g caster sugar
2 bananas

Method

  1. Blitz the biscuits in a food processor to make fine crumbs.
  2. Split the vanilla pod in half lengthways and scrape out the seeds. Put them in a bowl with the cream cheese, crème fraîche and cream, and beat together. Swirl half the dulce de leche into the mixture.
  3. Sprinkle the biscuit crumbs onto 4 serving plates and top each one with a quenelle of the cheesecake mixture. Chill in the fridge.
  4. While the cheesecake is chilling, put the butter and sugar in a frying pan and melt to make a caramel. Peel and halve the bananas and cook for 1–2 minutes in the caramel, until golden.
  5. Place a piece of caramelized banana next to the cheesecake on each plate, and serve immediately.
