O’Rourkes diner in Middletown, Connecticut, is famous for being one of the first diners in the US that’s still going. The menu is massive, as are the portions, but neither are as massive as the guy who runs it. Brian is the true star of the show. They serve 40-odd types of egg dishes listed on a seven-page menu. But best of all are the pancakes with fruit and maple syrup.

Ingredients

Quantity Ingredient
200g plain flour
10g baking powder
2 eggs
200ml milk
vegetable oil, for frying
100ml maple syrup
400g blackberries

Method

  1. Whisk together the flour, baking powder, eggs and milk in a bowl to make a smooth batter.
  2. To make the pancakes, heat a little oil in a non-stick frying pan. Spoon the mixture into the pan using a dessertspoon. Cook in batches for 1–2 minutes, or until the edges of the pancakes are slightly brown. Flip them over and cook on the other side. Remove and keep warm.
  3. Meanwhile, gently warm through the maple syrup and blackberries in a saucepan for 1–2 minutes.
  4. Serve the pancakes warm with several spoonfuls of the blackberries and syrup.
