Warm thai beef salad with chilli, lime & palm sugar

The key to this recipe is the dressing, which works so well with salads. It’s brilliant as a dressing with barbecued food, and gives a great fresh flavour to anything it’s served with – whether it’s with meat or fish, I love it. All the ingredients can be found easily in the supermarket; there’s no substitute for palm sugar, which has a flavour all of its own.

For the beef

400g beef fillet
3 garlic cloves
2 small round shallots
50ml coconut milk
50g crunchy peanut butter
2 teaspoons chilli oil
25ml rice wine vinegar
1 tablespoon soy sauce
1 teaspoon caster sugar
1 lime, juiced and grated zest
25ml vegetable oil
sea salt
freshly ground black pepper

For the salad

2 garlic cloves
1 x 5cm piece fresh root ginger
1 fresh long red chilli
3 tablespoons fresh mint leaves
3 tablespoons fresh coriander leaves
50g palm sugar
25ml rice wine vinegar
25ml lime juice
1 tablespoon vegetable oil
4 little gem lettuces

Method

  1. Thinly slice the beef. Roughly chop the garlic cloves and shallots. Place all the ingredients except the vegetable oil and beef in a food processor and blitz to make a smooth purée. Season with salt and pepper, add the beef and stir until well combined.
  2. Heat a griddle pan until hot, add the vegetable oil and beef and cook for 2–3 minutes on each side for medium-rare, or longer if you prefer. Remove and set aside to rest.
  3. While the beef is cooking, make the Thai salad. Roughly chop the garlic, ginger, chilli and herbs. Pound them to a paste with the palm sugar in a pestle and mortar. Transfer the mixture to a bowl, add the rice wine vinegar, lime juice and oil and stir until well combined.
  4. Separate the leaves of the little gem lettuce and toss them in the dressing. Slice the beef and arrange it on top of the salad, then serve.
