Granita is related to sorbet as it’s a semi-frozen dessert made from water, sugar and flavourings. It originates from Italy and that’s where I’ve eaten some of the best granitas, probably due to the quality of the lemons. The texture of granitas varies so much – if churned in a machine it will become smoother, but if forked through it will have a chunkier texture.

Ingredients

Quantity Ingredient
250g caster sugar
2 lemons, zested
4 lemons, juiced

Method

  1. Put the caster sugar into a saucepan with 500ml water and bring to the boil. Simmer for 5 minutes, then leave to cool.
  2. Add the lemon zest and juice to the sugar syrup.
  3. Pour into a freezerproof container and freeze for 3 hours, stirring every 15 minutes to prevent the mixture freezing into a solid block.
