Ražnjici is a very popular barbecued dish in Croatia that originated in the Middle East or Asia, but somehow found its way to Croatian tables. You can use beef or lamb instead of pork and even some bacon to make it more flavoursome. It’s delicious served with Sautéed vegetables with rice, or duved.

Ingredients

800g pork neck
1 eggplant, cut into 3 cm dice
2 capsicums, cut into 3 cm dice
2 brown onions
juice of 1/2 lemon
extra-Œvirgin olive oil, for drizzling
sea salt
freshly ground black pepper

Marinade

1 brown onion, chopped
4 garlic cloves, chopped
2 rosemary sprigs
10 thyme sprigs
2 bay leaves
100ml extra-virgin olive oil
30ml white wine vinegar

Method

  1. Slice the pork neck into 1 cm slices and then into 3 cm cubes.
  2. For the marinade, combine the onion and garlic in a mixing bowl with the herbs, olive oil, vinegar and salt and pepper. Add the meat, eggplant and capsicum. Mix well to combine then leave in the refrigerator overnight.
  3. The following day, cut the onions into large slices and start spiking the marinated meat, onion, eggplant and capsicum onto skewers. (You can use metal or wooden skewers – if you use wooden ones, make sure you soak them in water for an hour first so they don’t burn on the barbecue.)
  4. Preheat a barbecue grill plate or chargrill pan to high.
  5. Grill the skewers on the barbecue for about 5 minutes on each side or until the meat is cooked through. Squeeze over some lemon juice, drizzle with olive oil and serve.
