This dish just rocks. It’s a really tasty, earthy accompaniment to chicken or fish.

Ingredients

Quantity Ingredient
1 cup small green puy lentils
2 tablespoons olive oil
2 garlic cloves, crushed
1 onion, finely chopped
1/2 cup chopped flat-leaf parsley
750ml water
sea salt
freshly ground black pepper

Method

  1. Rinse and drain the lentils. Heat the olive oil in a saucepan, add the garlic and onion and cook until soft. Add the lentils, parsley and water, bring to the boil then turn down the heat and simmer for about 20 minutes, or until the lentils are tender but still hold their shape. Season with salt and pepper and serve.
