The key with this one is to know your audience. You can’t make this for a gathering where your brother or sister are bringing their new belle or beau, you need to know your guests’ foodie foibles and be sure everyone will like the filling. For this is easy one-size-fits-all-fayre; an elasticated trouser of a recipe.

Method

  1. Cut the French stick in half lengthways. This needs to be able to fit under your grill, so cut accordingly. Toast the bread under a hot grill and then layer the filling of your choice on one side of the bread and place the lid back on. If your filling has cheese in it, I’d crumble or grate it onto both open sides of the bread before grilling as melted cheese always adds to a sandwich, I think.
  2. Serve whole on a large platter with a serrated knife to hand so that people can portion up the toastie themselves. Minimum effort, maximum taste. If you’re feeling a little more energetic you might want to serve with orzo salad or chargrilled carrot salad but don’t feel you have to.
