Watermelon is 91 per cent water. Hence the modest calorie count. Extreme refreshment – just right for a hot summer’s day.

Ingredients

Quantity Ingredient
450g watermelon, diced
1 teaspoon lime juice
1 teaspoon finely grated fresh root ginger
10 fresh mint leaves, plus extra to decorate
a large handful ice, plus extra to serve

Method

  1. Put all the ingredients into a blender and blitz until smooth. Place the extra ice in 2 tall glasses and pour in the smoothie. Decorate each glass with a few extra mint leaves and serve immediately.
