My fresh strawberry and mint lassi captures the very essence of the English summertime. Nothing could purport to be as English as this Anglo-Indian lassi. In-between the crushed ice, darting around like tennis balls at a microscopic Wimbledon Tournament, are anthocyanins bursting with sheer enthusiasm just to get into our body and protect us from the signs of ageing – all very good if we have happened to be out in the sun. Mint, yogurt and ice work collectively as a trilogy of coolants.

Keep this flawless thirst-quencher for long, hot afternoons.

Ingredients

Quantity Ingredient
250g strawberries, hulled
fresh mint leaves, plus extra to decorate
200ml natural yogurt
a large handful ice, plus extra to serve
sugar, to taste

Method

  1. Put all the ingredients into a blender and blend together until smooth.
  2. Place the extra ice in tall glasses and pour in the lassi smoothie.
  3. Decorate each serving with an extra mint leaf and serve immediately.

Note:

  • One serving = 120%+ RDA antioxidants. Antibacterial and antifungal: mint.
