Chopped cos salad with green herbs

This salad is a great accompaniment to all sorts of grilled meats, and is especially good with kebabs.

Ingredients

Quantity Ingredient
2 baby cos lettuces, outer leaves discarded
handful wild rocket leaves, stems removed
2 spring onions, finely chopped
2 tablespoons dill, chopped
2 tablespoons flat-leaf parsley leaves, chopped
1 tablespoon mint leaves, chopped
1 small garlic clove
1/2 teaspoon sea salt
60ml extra-virgin olive oil
1/2 lemon, juiced
1/2 teaspoon dried mint
freshly ground black pepper

Method

  1. Shred the lettuce leaves, then toss gently in a large bowl with the rocket, spring onions and herbs.
  2. Crush the garlic with the salt and whisk with the remaining ingredients to make a dressing. Taste and adjust the seasoning before dressing the salad.
