Iranian khoresht dishes tend to include meat, even when they are primarily vegetable based. This eggplant khoresht is meatless, so Iranians may not consider it authentic, but the principles of the dish are the same – slow-cooked ingredients that result in lots of delicious sauce. It’s actually a very versatile dish and is equally delicious served hot, warm or cold, with rice or plenty of warm bread.
