Ingredients

Quantity Ingredient
Yoghurt bread dough
150g green olives, chopped
1 teaspoon fresh thyme leaves
1/2 teaspoon chilli flakes, (optional)
olive oil

Method

  1. After the bread has finished proving for the first 2 hours, knock it back and knead in the olives, thyme and chilli flakes.
  2. Preheat the oven to 200°C. Shape the dough into a round and place on a greased baking tray. Leave in a warm place for another 45 minutes to prove again. Brush with olive oil before baking for 20–30 minutes, until it is golden brown. It should sound hollow when you tap the bottom. Transfer to a wire rack and leave until completely cool before eating.
