Ingredients

Quantity Ingredient
3 medium tomatoes, peeled, seeded and diced
2 red bullet chillies, seeded, scraped and finely diced
1 garlic clove, finely diced
3 tablespoons grated ginger
2 tablespoons sugar
2 lemons, juiced
150ml olive oil
100ml walnut oil
salt and white pepper

Method

  1. Put all the ingredients, except for the olive and walnut oils, into a food processor. Whiz to a fine, smooth purée. With the motor running, gradually add the oils until they are fully absorbed. Check the seasoning and add salt and pepper, to taste. Pour into a sealable jar and store in the fridge. It will keep for 5 days.
