These little fritters can be served at room temperature as part of a mezze selection or as a starter – that’s if you can resist eating them straight out of the pan! The grated zucchini is salted to help draw out as much moisture as possible. The fritters should be made as soon as the zucchini is thoroughly dried, or they will start to seep liquid. Mixing rice flour with the plain flour is a neat trick that helps make the fritters really crispy. As for the choice of herbs, mint and dill are both delicious so it really depends on your whim on the day.

Ingredients

600g zucchini
salt
1 small onion, grated
1 small garlic clove, finely chopped
100g bulgarian feta, crumbled
2 eggs, lightly beaten
2 tablespoons flat-leaf parsley, finely shredded
2 tablespoons mint or dill, finely shredded
1/2 teaspoon dried mint
50g plain flour
30g rice flour
olive oil, for shallow-frying

Method

  1. Wash the zucchini, grate it coarsely and put it in a colander. Sprinkle lightly with salt, toss and set aside for 20 minutes. Squeeze well to extract as much excess liquid as you can and pat dry with kitchen paper.
  2. Put the zucchini, onion, garlic, feta, eggs and herbs in a bowl and stir to combine. Sift the two flours onto the mixture and lightly combine.
  3. Heat the oil in a non-stick frying pan until sizzling. Drop small tablespoons of batter into the hot oil and flatten gently. Cook for 2 minutes on each side, or until golden brown. Drain on kitchen paper and serve with a sprinkle of salt, a squeeze of lemon or a drizzle of yoghurt.
