Ingredients

200g liquorice
300ml water
Ice cream base

Method

  1. Cut the liquorice into small pieces and put into a saucepan with the water. Heat slowly, stirring from time to time, until the liquorice dissolves to a smooth paste.
  2. Make the ice cream base. Stir around a third into the melted liquorice, a bit at a time, so that it is incorporated gradually and remains smooth. Tip back into the remaining base mixture, stir and chill in the refrigerator. Pour the chilled mixture into an ice cream machine and churn, according to the manufacturer’s instructions.
