Yoghurt–tarragon–cucumber salad

Ingredients

Quantity Ingredient
500g natural yoghurt, strained overnight or for 24 hours
2 lebanese cucumbers, seeded and grated
1 garlic clove, crushed with 1 teaspoon salt
1/2 cup fresh tarragon leaves, roughly chopped
1 lemon, juiced
arak or pernod, splashed
salt and pepper

Method

  1. Mix all the ingredients together in a large bowl and season with a little salt and pepper. Line a sieve with muslin or a tea towel and strain for a further 4–6 hours. Chill until required
