Soft herb salad with goat’s cheese, crisp bread, sumac and pine nuts

Ingredients

Quantity Ingredient
1 piece arabic bread
60ml olive oil
60g butter
1 purple onion, thinly sliced
1 teaspoon ground sumac
1/2 cup parsley leaves
1/2 cup coriander leaves
1/2 cup watercress leaves
2 pickled artichokes, finely sliced
1/2 cup frisée lettuce
100g goat’s cheese, crumbled
60g fried pine nuts
2 lemons, juiced
80ml extra-virgin olive oil
salt and pepper

Method

  1. To prepare the crisp bread, roll the Arabic bread into a tight roll and slice thinly. Heat the oil with the butter and fry the bread until it is golden. Tip onto kitchen paper to drain.
  2. Place the onion in a small bowl, sprinkle over the sumac and mix gently. Tip the herb leaves, artichokes and lettuce into a large serving bowl, together with the goat’s cheese, pine nuts and fried bread.
  3. Add the lemon juice, oil and onion and lightly season with salt and pepper. Gently toss the salad and serve straight away with grilled or roasted meats or seafood.
