Ingredients

Quantity Ingredient
1 1/2 cups dried chickpeas
1 teaspoon sea salt
3/4 cup tahini
1/2 cup lemon juice
2 garlic cloves, crushed
1/2 teaspoon lemon salt
1/2 teaspoon ground cumin
pinch cayenne pepper

Method

  1. Soak the chickpeas overnight in plenty of water. Drain and rinse the chickpeas, then place them in a saucepan with three times their volume of salted water. Bring to the boil, reduce the heat, then simmer, uncovered, for about 45 minutes, or until the chickpeas are very soft.
  2. Drain the chickpeas, then purée them in a blender. With the motor running, slowly add the tahini and lemon juice, then the garlic, lemon salt, cumin and cayenne pepper.
  3. Pour the dip into a serving dish.
