Herrings in cream with apple

This is probably my favourite herring dish—although it’s a close-run thing! You’ll find Bismarck herrings in good delicatessens or Jewish grocery stores.

Ingredients

Quantity Ingredient
3-5 onions, thinly sliced
1-2 x 500 g jars bismarck herrings
1-2 dessertspoons sugar
300ml cream
1 granny smith apple, cored and thinly sliced

Method

  1. Blanch the onion slices for 1 minute in a saucepan of boiling water, then refresh them in iced water. Set them aside in a colander to drain.
  2. Cut the herrings into bite-sized pieces. A little of the pickling liquid in the jar adds to the flavour, but don’t use more than a spoonful or so.
  3. In a serving bowl, layer the herring, onion, a gentle sprinkle of sugar and some cream, with a thin layer of apple on top. Repeat the layers, ending with a layer of cream.
  4. Cover and leave in the refrigerator overnight.
