This is a warming winter dish for very cold days. It is the Bukharan version of chicken soup.

Ingredients

Quantity Ingredient
1kg chicken
2 tablespoons olive oil
2 onions, chopped
1 carrot, chopped
1 red capsicum, chopped
1 teaspoon salt
1/2 teaspoon ground cumin
1/2 teaspoon ground coriander
2 large quinces, quartered

Method

  1. Quarter the chicken and remove the skin. Heat the oil in a saucepan and sauté the onions until slightly brown. Add the carrot and capsicum and fry until softened. Add the chicken, cover and steam for 5 minutes.
  2. Mix the salt, cumin and coriander into the chicken, then add the quince and simmer for 20 minutes, until the quince is softened but still has its shape.
  3. To serve, place the chicken on a platter, cover with quince and pour the sauce over the top.
